- 8 flour tortillas (medium size, about 20cm diameter)
- 2 cups grated cheese (aged cheddar or Mexican blend for best melting)
- 1 red capsicum, diced into small, even pieces
- ½ red onion, finely diced
- 2 tbsp extra virgin olive oil, divided
- 1 tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp fine sea salt
- ¼ tsp freshly ground black pepper
- 2 tbsp fresh cilantro, roughly chopped
- Optional: 1 jalapeño, finely diced for heat
- For serving: sour cream, fresh salsa, lime wedges, and extra cilantro
Method
Prepare the sweet potato base: Heat 1 tablespoon olive oil in a large, heavy-based frying pan over medium heat. The pan should be hot enough that a piece of sweet potato sizzles gently when added. Add diced sweet potato in a single layer – don’t overcrowd as this causes steaming rather than the desired caramelization.
Achieve perfect tenderness: Cook sweet potato cubes for 8-10 minutes, stirring occasionally with a wooden spoon to prevent sticking. The pieces should develop golden-brown edges while becoming tender throughout. They’re ready when easily pierced with a fork but still hold their shape – overcooking creates mushy filling.
Build flavor layers: Add diced capsicum and onion to the pan with the sweet potatoes. Cook for 3-4 minutes, stirring gently, until the vegetables soften and the onion becomes translucent. The capsicum should retain slight bite for textural interest.
Bloom the spices: Add cumin, paprika, salt, and pepper to the pan. Stir constantly for 1 minute until the spices become fragrant and coat the vegetables evenly. This blooming process intensifies the flavors and prevents any raw spice taste in the finished dish.
Incorporate the beans: Add the drained black beans to the pan and cook for 2-3 minutes, stirring gently to avoid breaking them. The beans should be heated through and well-coated with the spice mixture. Remove from heat and stir in fresh cilantro, which will wilt slightly from the residual heat.
Cool for easy assembly: Let the filling cool for 5-10 minutes before assembling quesadillas. This prevents the cheese from melting too quickly and makes the filling easier to handle. The mixture should be moist but not wet – if there’s excess liquid, drain it off.
Assemble with precision: Lay tortillas flat on a clean work surface. Spoon filling onto half of each tortilla, leaving a 1cm border around the edges. Sprinkle cheese evenly over the filling – don’t overfill as this makes flipping difficult. Fold the empty half over the filling, pressing gently to seal.
Cook to golden perfection: Heat a clean, dry frying pan over medium heat. Cook quesadillas one at a time for 2-3 minutes per side until golden brown and crispy, with cheese fully melted. Press gently with a spatula to ensure even browning. The exterior should be crispy while the interior remains tender.
Maintain temperature: Keep cooked quesadillas warm in a low oven (150°C) while cooking the remaining batch. This prevents them from becoming soggy and ensures everyone eats hot, crispy quesadillas.
Serve with style: Cut each quesadilla into 4 wedges using a sharp knife or pizza cutter. Arrange on warmed plates with small bowls of sour cream, fresh salsa, and lime wedges. Garnish with extra cilantro and serve immediately while the cheese is still molten.
