Begin by selecting the freshest lettuce possible – butter lettuce is ideal for this salad because of its tender leaves and mild, sweet flavor that won’t compete with the delicate herbs. The leaves should be bright green, crisp, and free from any dark spots or wilting. Handle them gently throughout the preparation process to avoid bruising the delicate leaves.
Remove the lettuce leaves from the core and rinse them thoroughly in cool water, gently agitating them to remove any dirt or debris that might be clinging to the leaves. This is particularly important with butter lettuce, which can harbor soil in its tender folds. Take care not to bruise the leaves during washing.
After washing, dry the lettuce completely using a salad spinner or by gently patting the leaves with clean kitchen towels.
