Method
Begin by carefully preparing the French beans, which is crucial for achieving the perfect texture in the finished dish. Trim both ends off each bean using a sharp knife, removing any tough strings that might run along the sides. Take your time with this step as uniformly prepared beans will cook more evenly and present more attractively on the plate.
Bring a medium-sized pot of generously salted water to a vigorous boil – the water should taste almost like seawater, which helps season the beans from within during the blanching process. Add the trimmed beans to the boiling water and cook for exactly 2-3 minutes until they turn bright green and become just tender but still maintain a pleasant crispness when bitten.
Immediately drain the beans and plunge them into a large bowl of ice water to halt the cooking process completely. This shocking technique is essential for preserving the beans’ brilliant green color and preventing them from becoming overcooked and mushy. Allow the beans to cool completely in the ice water, then drain thoroughly and set aside. This blanching step can be done hours ahead of time, making the final cooking very quick and efficient.
Heat the olive oil in a large frying pan over medium heat, ensuring the pan is large enough to accommodate all the beans in a relatively single layer. Add the thinly sliced garlic to the warm oil and cook very carefully for 1-2 minutes, stirring constantly, until the garlic becomes just golden and wonderfully fragrant. Watch the garlic closely during this step, as it can go from perfectly golden to burnt and bitter very quickly.
Add the blanched and dried beans to the pan along with the fresh lemon zest, tossing everything together to coat the beans evenly with the aromatic garlic oil. Season generously with sea salt and freshly cracked black pepper, then continue cooking for another 2 minutes, tossing the beans frequently to ensure they heat through evenly and absorb all the wonderful flavors.
The beans are ready when they’re heated through completely and have a beautiful glossy appearance from the olive oil. They should retain their bright green color and crisp-tender texture, offering just slight resistance when bitten.
