  • 2 tsp fine sea salt
  • 350ml warm water (around 37°C/98°F)
  • 100ml extra virgin olive oil, divided (Italian Ligurian preferred)
For the toppings:
  • 300g cherry tomatoes, halved lengthwise
  • 4 large garlic cloves, sliced paper-thin
  • 1 medium red onion, sliced into thin half-moons
  • 2 tbsp coarse sea salt (Maldon or fleur de sel)
  • 1 tsp freshly cracked black pepper
  • Additional fresh oregano leaves for finishing

Method

Prepare oregano and create dough base: Wash fresh oregano thoroughly in cool water and pat completely dry with paper towels. Strip all leaves from stems and roughly chop, reserving the most attractive leaves for final garnish. In a large mixing bowl, combine flour, instant yeast, and fine salt, whisking to distribute evenly and prevent the salt from directly contacting the yeast.

Form initial dough: Create a well in the center of the flour mixture and combine warm water with 2 tablespoons olive oil. Pour the liquid into the well and mix with a wooden spoon until a shaggy, sticky dough forms. The dough should be wetter than typical bread dough – this high hydration creates the characteristic open crumb structure of good focaccia.

Develop gluten structure: Turn the dough onto a lightly floured surface and knead for 8-10 minutes until smooth, elastic, and slightly tacky but not sticky. The dough should pass the windowpane test – when stretched, it should form a thin, translucent membrane without tearing. Proper gluten development is crucial for the bread’s final texture.

First rise: Place the kneaded dough in a well-oiled bowl, turning once to coat all surfaces with oil. Cover with a damp kitchen towel or plastic wrap and let rise in a warm, draft-free place for 1 hour until doubled in size. The dough is ready when a finger pressed into it leaves an indentation that doesn’t spring back immediately.

Prepare baking vessel: Generously oil a 30cm x 40cm baking tray or similar-sized rectangular pan with 2 tablespoons olive oil, ensuring the entire bottom and sides are well-coated. This oil prevents sticking while contributing to the crispy bottom crust that characterizes excellent focaccia.

Shape and second rise: Transfer the risen dough to the prepared tray and gently stretch and press it to fit the pan dimensions. Don’t worry if it doesn’t reach the corners immediately – let it rest for 10 minutes, then stretch again. Cover and let rise for another 1 hour until puffy and nearly doubled in thickness.

Create signature dimples: Preheat oven to 220°C (425°F) with rack positioned in center. Using your fingertips, create deep dimples all over the dough surface, pressing down to the bottom of the pan but not breaking through. These dimples will hold the olive oil and create the characteristic focaccia texture.

Add oil and aromatics: Drizzle the remaining olive oil generously over the entire surface, ensuring it pools in the dimples and covers the dough completely. Scatter the halved cherry tomatoes cut-side up, thin garlic slices, red onion slices, and most of the chopped oregano evenly across the surface, pressing gently to help them adhere.

Season and bake: Sprinkle coarse sea salt and freshly cracked black pepper evenly over the surface. The salt should be generous but not overwhelming – it will help create the crispy, flavorful crust. Bake for 20-25 minutes until golden brown around the edges and cooked through, with the tomatoes slightly caramelized.

Cool and finish: Remove from oven and immediately transfer to a wire rack to prevent the bottom from becoming soggy. Let cool for 10 minutes to allow the crumb to set, then garnish with reserved fresh oregano leaves while still warm. The bread should sound hollow when tapped on the bottom.

Serve at optimal temperature: Cut into squares or rectangles and serve warm or at room temperature. The focaccia should have a crispy exterior, tender crumb, and be infused throughout with oregano and olive oil flavors.
