For the aromatic tomato sauce:
- 400g tin premium crushed tomatoes (San Marzano preferred)
- 60ml extra virgin olive oil
- 1 large brown onion, finely diced
- 2 garlic cloves, minced
- 125ml robust red wine (Chianti or similar)
- 1 tsp superfine sugar to balance acidity
- Fresh basil leaves for finishing
- Salt and white pepper to taste
Method
- Master the capsicum roasting technique: Preheat oven to 220°C (fan 200°C) and position rack in upper third. Place whole capsicums on a lined baking tray and roast for 30-40 minutes, turning once halfway through, until skins are completely blackened and blistered. The charring should be thorough – this creates the signature smoky flavor.
- Steam for perfect peeling: Immediately transfer hot capsicums to a large plastic bag or covered bowl and seal tightly. The trapped steam will loosen the charred skins, making peeling effortless. Let stand for 15 minutes until cool enough to handle safely.

- Build the tomato sauce foundation: Heat olive oil in a heavy-based saucepan over medium heat. Add diced onion and cook slowly for 8-10 minutes until softened and lightly golden. This patient cooking develops sweetness that balances the tomatoes’ acidity.
- Develop sauce complexity: Add minced garlic and cook for 1 minute until aromatic. Pour in red wine and simmer until reduced by half, concentrating flavors and removing harsh alcohol notes. Add crushed tomatoes, sugar, salt, and pepper. Simmer gently for 20 minutes until thickened.
- Create the ricotta filling: In a large bowl, combine ricotta, wilted and chopped spinach (squeezed completely dry), half the Parmesan, beaten eggs, garlic paste, herbs, and roasted capsicum strips. - Prepare pasta for rolling: If using store-bought lasagne sheets, soften according to package directions until pliable but not mushy. Cut into 12cm x 15cm rectangles – you’ll need 12-14 pieces. Fresh pasta may only need brief blanching or can sometimes be used directly.
- Master the cannelloni technique: Lay pasta rectangles on clean work surface. Place 2-3 tablespoons of filling along one short edge of each rectangle, leaving 1cm border on sides. Roll up carefully but firmly, ensuring filling is enclosed but not squeezed out.

Capsicum Roasting Mastery: Proper charring is essential – the skins should be completely blackened for maximum flavor development. Under-roasted capsicums won’t peel properly and lack the characteristic smoky sweetness.
