- DIFFICULTY: EASY
- 40 minutes (10 min prep + 30 min cooking)
Ingredients
Serves: 2-3 as a main course or 4-6 as an elegant side dish
FOR THE KIMCHI MAYONNAISE:
- 1 large head cauliflower (about 800g), cut into uniform florets
- 3 tbsp extra virgin olive oil, divided
- 3 garlic cloves, minced, divided
- 1 tsp ground turmeric (optional, for color and earthiness)
- 1½ tsp flaky sea salt, plus extra for finishing
- ¾ tsp freshly ground black pepper
- ¾ cup thick Greek-style yogurt, at room temperature
- 2 tbsp fresh lemon juice (about ½ lemon)
- Optional: ½ tsp ground cumin for Middle Eastern warmth
- Optional: 2 tbsp fresh herbs (parsley, cilantro, or mint), chopped
- Optional: ¼ tsp chili flakes for gentle heat
- Optional: toasted pine nuts or almonds for textural contrast
Method
- Prepare cauliflower for optimal roasting: Remove leaves and trim stem, keeping core intact to hold florets together. Cut into uniform pieces about 4cm in size – consistent sizing ensures even cooking and prevents smaller pieces from burning while larger ones remain undercooked.
- Set up for maximum caramelization: Preheat oven to 220°C (fan 200°C) and position rack in upper third for intense heat. Line a large, heavy baking sheet with parchment paper. High heat is crucial for developing the golden, caramelized edges that make this dish exceptional.
- Create the spice mixture: In a large bowl, combine 2½ tablespoons olive oil with two-thirds of the minced garlic, turmeric (if using), cumin, salt, and pepper. Whisk until well combined and aromatic – the mixture should smell fragrant and inviting.
- Coat cauliflower thoroughly: Add cauliflower florets to the spice mixture, tossing with clean hands to ensure every piece is evenly coated. The florets should glisten with oil and spices, which will create beautiful browning during roasting.
- Arrange for even cooking: Spread seasoned cauliflower in a single layer on prepared baking sheet, ensuring pieces don’t overlap or touch. Overcrowding causes steaming rather than roasting, preventing the crucial caramelization that develops complex flavors.
- Roast to perfection: Place in preheated oven and roast for 25-30 minutes, turning once halfway through, until deeply golden brown with crispy edges and fork-tender centers. The cauliflower should have concentrated, nutty flavors and appealing textural contrast.
- Create the garlic yogurt: While cauliflower roasts, combine Greek yogurt with remaining minced garlic, lemon juice, remaining olive oil, and a pinch of salt. Whisk until smooth and creamy. Let stand at room temperature to allow flavors to meld and intensify.
- Allow proper resting: Remove cauliflower from oven and let cool for 3-4 minutes, allowing the caramelized coating to set slightly while the interior remains warm and tender.
- Present with style: Spread garlic yogurt on a serving platter or individual plates, creating an attractive base. Arrange roasted cauliflower over the yogurt, ensuring pieces are displayed to show their golden, caramelized surfaces.
- Add finishing touches: Drizzle with any remaining roasting juices, sprinkle with fresh herbs, chili flakes, or toasted nuts if using. Finish with a final sprinkle of flaky salt for texture and flavor enhancement.
Perfect Pairings: Outstanding alongside grilled meats, roasted fish, or as part of a mezze spread. The Middle Eastern flavors pair beautifully with lamb or chicken, while the cooling yogurt makes it excellent with spicy dishes.
Make-Ahead Strategy: Cauliflower can be roasted up to 2 hours ahead and served at room temperature, or reheated briefly in a warm oven. Garlic yogurt can be made up to 2 days ahead and refrigerated.
Seasonal Variations: Add pomegranate seeds in winter for color and tartness, or fresh herbs like dill and mint in spring for aromatic complexity that complements the Middle Eastern flavor profile.
