Quick Pickled Cucumber Ribbons Recipe:
- 1 large cucumber

Method
Select a large, firm cucumber for this recipe – it should feel heavy for its size and have unblemished skin. The quality of the cucumber is crucial since it’s the star of this preparation. Wash the cucumber thoroughly under cold running water and pat it completely dry. You can peel it if you prefer, but leaving the skin on adds beautiful color contrast and additional nutrients.
Using a sharp vegetable peeler, create long, elegant ribbons by running the peeler down the length of the cucumber in smooth, even strokes. Apply consistent pressure to create ribbons of uniform thickness – they should be thin enough to be flexible but not so thin that they break easily. Continue peeling until you’ve used most of the cucumber, stopping when you reach the seedy core.
Place the cucumber ribbons in a colander and sprinkle them evenly with the salt, tossing gently to ensure all pieces are lightly coated. The salt will draw out excess moisture from the cucumbers, concentrating their flavor and helping them maintain their crisp texture even after pickling. Set the colander aside for exactly 10 minutes to allow this process to work.
While the cucumbers are draining, prepare the pickling liquid by combining the white vinegar, water, sugar, mustard seeds, and chilli flakes (if using) in a small saucepan. Heat the mixture over medium heat, stirring occasionally, until it just begins to simmer and the sugar completely dissolves. You don’t want to boil it vigorously – just heat it enough to dissolve the sugar and slightly warm the vinegar.
Remove the pickling liquid from heat and let it cool slightly while you finish preparing the cucumbers. The liquid should be warm but not hot when you add it to the cucumbers, as boiling liquid would cook them and make them lose their appealing crispness.
After 10 minutes, pat the cucumber ribbons completely dry with clean kitchen towels, removing as much moisture as possible. This step is important for achieving the right texture in the final pickles. Transfer the dried ribbons to a clean glass jar or non-reactive bowl that will hold them comfortably.
Pour the warm pickling liquid over the cucumber ribbons, ensuring they’re completely submerged. If needed, press them down gently with a clean spoon to keep them under the liquid. The acid in the vinegar will begin working immediately to pickle the cucumbers while the mustard seeds and optional chilli flakes add complexity and gentle heat.
Cover the container and refrigerate for at least 30 minutes before serving, though longer is even better. The cucumbers will continue to develop more complex flavors the longer they pickle. After several hours, they’ll have a wonderful balance of tangy, sweet, and slightly spicy flavors.
