  • 1 cup pearl couscous (Israeli couscous)
  • 1 medium pear, diced into 1cm pieces
  • 200g pumpkin or butternut squash, peeled and cubed
  • 1 tbsp extra virgin olive oil
  • ½ tsp ground cumin
  • ¼ tsp smoked paprika (optional)
  • Sea salt and freshly ground black pepper
  • ¼ cup fresh herbs (parsley, mint, or cilantro), chopped
  • 2 tbsp toasted pine nuts or pumpkin seeds (optional)
For the herbed yoghurt:
  • ½ cup thick Greek-style yoghurt
  • 1 tsp fresh lemon juice
  • 1 tbsp fresh herbs, finely chopped (parsley, chives, mint, or dill)
  • 1 small garlic clove, minced (optional)
  • Sea salt to taste

Method

  1. Prepare the pumpkin: Preheat oven to 200°C (fan 180°C). Peel pumpkin and cut into uniform 1.5cm cubes – consistent sizing ensures even cooking. Pat the cubes dry with paper towels to remove excess moisture, which helps achieve better caramelization.
  2. Season and roast: In a large bowl, toss pumpkin cubes with olive oil, cumin, smoked paprika (if using), salt, and pepper until evenly coated.
