Mushroom & Spinach Rice Bowl with Soy Dressing Recipe:
  • 200g mixed mushrooms (shiitake, oyster, or button), sliced
  • 2 tsp sesame oil
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp Coonowrin Honey
  • 2 cups cooked jasmine or brown rice
  • 2 handfuls baby spinach
  • 1 spring onion, sliced
  • 1 tsp sesame seeds

Method

Begin by preparing all ingredients before you start cooking, as this dish comes together very quickly once you begin the stir-frying process. If using a mixture of mushrooms, clean them gently and slice them uniformly to ensure even cooking. Different mushroom varieties will add complexity to the final dish – shiitake provides meaty texture and rich flavor, oyster mushrooms offer delicate taste and interesting shape, while button mushrooms contribute reliable earthiness.

Prepare the soy-honey dressing that will glaze the vegetables and tie all the flavors together. In a small bowl, whisk together the soy sauce, rice vinegar, and honey until the honey completely dissolves and the mixture is smooth. This balance of salty, sweet, and acidic elements is fundamental to many Asian flavor profiles and will transform simple ingredients into something special.

Ensure your rice is cooked and ready to serve – it can be freshly cooked and still warm, or leftover rice that’s been reheated. If using leftover rice, break up any clumps with a fork and warm it gently in the microwave or in a covered pan with a splash of water to restore its fluffy texture.

Heat a large frying pan or wok over high heat until it’s very hot – this high temperature is crucial for achieving the proper stir-fry technique that seals in flavors while maintaining appealing textures. Add the sesame oil, which should immediately shimmer and move freely around the pan, indicating the perfect temperature for cooking.

Add the sliced mushrooms to the hot pan and stir-fry vigorously for 5-6 minutes, keeping them moving constantly to ensure even cooking and prevent burning. The high heat will quickly evaporate the mushrooms’ natural moisture while developing beautiful golden-brown colors and concentrated flavors. The mushrooms should become tender but still maintain some bite.

The mushrooms are perfectly cooked when they’ve developed golden edges and have reduced in volume as their moisture evaporates. They should smell intensely earthy and aromatic, with no raw or watery qualities remaining. If using mixed mushroom varieties, some may cook faster than others, so adjust timing accordingly.

Turn the heat to low and add the baby spinach to the pan with the mushrooms. The residual heat and moisture from the mushrooms will be sufficient to wilt the spinach quickly. Stir gently for just 1 minute until the spinach wilts and turns bright green – overcooking will make it mushy and dull in color.

Pour the prepared soy-honey dressing over the mushroom and spinach mixture, tossing everything together quickly to coat all ingredients evenly. The dressing should create a glossy coating that clings to the vegetables without pooling in the bottom of the pan. Continue stirring for another 30 seconds to ensure even distribution.

Remove the pan from heat and taste the mixture, adjusting seasoning if needed. The flavors should be well-balanced with no single element overwhelming the others. The mushrooms should taste rich and savory, the spinach fresh and green, while the dressing provides sweet-salty complexity.

Divide the warm cooked rice between two serving bowls, creating a foundation for the flavorful vegetables. The rice serves as both a base and a neutral backdrop that allows the mushroom and spinach flavors to shine while providing substance and satisfaction to the meal.

Spoon the hot mushroom and spinach mixture over the rice in each bowl, distributing it evenly and ensuring each serving gets plenty of the delicious dressing that has collected in the pan. The contrast between the neutral rice and the intensely flavored vegetables creates perfect balance in each bite.

Garnish each bowl with sliced spring onion and a sprinkle of sesame seeds. The spring onion provides fresh, sharp notes that brighten the rich mushroom flavors, while the sesame seeds add nutty crunch and visual appeal. These final touches transform a simple rice bowl into something that looks and tastes restaurant-quality.

For a more substantial meal, consider adding a soft-boiled egg with a runny yolk, crispy tofu cubes, or some sliced avocado. Each of these additions would complement the existing flavors while adding protein and richness. This versatile dish works equally well as a light lunch or satisfying dinner, and the components can be prepared ahead and quickly assembled when ready to eat.
