For the chicken:
- 4 large boneless, skinless chicken breasts (6-8 ounces each)
- 8 thin slices prosciutto di Parma
- 2 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 2 tbsp all-purpose flour for dusting
- Kitchen toothpicks for securing
For serving:
- 1 large lemon, cut into wedges
- Fresh oregano sprigs for garnish
- Additional pine nuts for garnish
Method
Prepare aromatic stuffing mixture: Wash fresh oregano thoroughly and pat completely dry with paper towels. Strip all leaves from stems and chop finely – the oregano should be minced but not pulverized. In a medium bowl, combine chopped oregano, crumbled feta, softened cream cheese, toasted pine nuts, minced garlic, and lemon zest. Mix thoroughly until well combined and taste for seasoning – the mixture should be aromatic and well-balanced.
Butterfly chicken with precision: Place chicken breasts on a cutting board and, using a sharp boning knife, cut horizontally through the thickest part of each breast, stopping about 1 inch from the opposite edge so the breast opens like a book. The goal is to create a uniform surface for stuffing while maintaining the breast’s structural integrity.
Pound for even thickness: Cover butterflied chicken with plastic wrap and pound gently with a meat mallet to an even 1.5cm thickness throughout. This ensures even cooking and creates a uniform surface for the stuffing. Be careful not to pound too aggressively, which could tear the delicate meat and create holes.
Season and stuff strategically: Season the interior of each butterflied breast with salt and pepper, then spread the oregano-feta mixture evenly over one half of each breast, leaving a 1cm border around the edges. The stuffing should be generous but not overflowing – too much will burst out during cooking, while too little won’t provide the desired flavor impact.
Secure filling carefully: Fold the chicken over to completely enclose the filling, ensuring no stuffing is visible from the outside. Secure with toothpicks placed diagonally at 2-inch intervals, or tie with kitchen twine if preferred. The packages should be tight enough to contain the filling but not so compressed that they squeeze out the mixture.
Wrap with prosciutto: Carefully wrap each stuffed breast with 2 slices of prosciutto, overlapping them slightly to ensure complete coverage. The prosciutto should be snug but not tight, as it will shrink slightly during cooking. The cured meat will provide both flavor and a protective barrier that keeps the chicken moist while creating an attractive presentation.
Prepare for cooking: Preheat oven to 190°C (375°F) with rack positioned in center. Heat olive oil in a large, oven-safe skillet over medium-high heat until shimmering but not smoking. Lightly dust the prosciutto-wrapped chicken with flour, which will help create a golden, crispy exterior.
Sear for golden perfection: Carefully place the wrapped chicken breasts in the hot oil and sear for 3-4 minutes per side until the prosciutto is crispy and golden brown. Don’t move them too early, which would tear the delicate wrapping. The prosciutto should be well-browned and slightly crispy before turning.
Finish in oven: Transfer the skillet directly to the preheated oven and bake for 12-15 minutes until the chicken reaches an internal temperature of 75°C (165°F) when measured at the thickest part. The prosciutto should be crispy and the chicken should feel firm but not hard when gently pressed.
Rest and prepare for service: Remove from oven and let rest for 5 minutes to allow the juices to redistribute and the filling to set slightly. Carefully remove toothpicks or twine before slicing. This resting period prevents the molten cheese from escaping when the chicken is cut.
Slice and present elegantly: Using a sharp knife, slice each breast diagonally into thick portions (about 2cm) that showcase the colorful stuffing and crispy prosciutto exterior. Arrange on warmed plates in an overlapping pattern that displays the beautiful cross-section of each slice.
Garnish and serve: Accompany each serving with fresh lemon wedges for brightness and sprigs of fresh oregano for aromatic appeal. A light scatter of additional toasted pine nuts adds textural interest and reinforces the Mediterranean theme. Serve immediately while the prosciutto is still crispy and the filling is warm.
Perfect Pairings: This sophisticated dish pairs beautifully with roasted Mediterranean vegetables, orzo pilaf, or creamy polenta that complement the Greek and Italian flavors. A crisp white wine like Sauvignon Blanc or a light red like Pinot Noir enhances the oregano and feta while not overwhelming the delicate chicken.
Make-Ahead Tips: The chicken can be stuffed and wrapped up to 4 hours in advance and refrigerated. Bring to room temperature for 20 minutes before cooking for even results. The stuffing mixture can be prepared up to 1 day ahead and refrigerated, but should be brought to room temperature before using.
Professional Presentation: For restaurant-quality presentation, ensure all slices are uniform thickness and arrange them with the cut side facing up to showcase the beautiful filling. A drizzle of high-quality olive oil and a sprinkle of coarse sea salt just before serving adds professional polish.
