Method
- Create the perfect marinade: In a shallow dish, combine fresh lemon juice, finely grated zest, minced garlic, 1 tablespoon olive oil, herbs, and Dijon mustard if using. Season generously with salt and pepper. The marinade should be aromatic and well-balanced – taste and adjust seasoning as needed. The acidity should be bright but not overpowering.
- Marinate with purpose: Add chicken to the marinade, turning to coat all surfaces thoroughly. Use your hands to massage the marinade into the meat, ensuring the acidic mixture penetrates for maximum flavor. Allow chicken to marinate at room temperature for 15-20 minutes while preparing other components, or refrigerate for up to 4 hours for deeper flavor development.
- Prepare pumpkin for optimal roasting: Preheat oven to 200°C (fan 180°C) and position rack in center. Select firm, dense pumpkin with good color – Kent or Queensland Blue varieties work excellently.
