Honeyed Carrot & Chickpea Salad Recipe:
- 400g carrots, cut into batons
- 1 tbsp olive oil
- Salt and pepper
- 1 can (400g) chickpeas, drained and rinsed
- 2 tbsp Coonowrin Honey
- 1 tbsp lemon juice
- 1 tsp ground cumin
- ¼ cup fresh parsley, chopped
Method
Preheat your oven to 200°C (fan 180°C) and line a large baking tray with baking paper. The high temperature is essential for achieving the beautiful caramelization that makes roasted carrots so appealing, concentrating their natural sweetness and creating attractive golden edges.
Prepare the carrots by peeling them and cutting into uniform batons approximately 1cm thick and 5-6cm long. Uniform sizing is crucial for even cooking – you want all the pieces to finish roasting at the same time. If your carrots vary significantly in thickness, adjust the size of your cuts accordingly, making thinner pieces from thicker carrots.
Place the carrot batons in a large bowl and drizzle with olive oil, tossing thoroughly to ensure every piece is well coated. The oil promotes even browning and prevents the carrots from drying out during the roasting process. Season generously with salt and pepper, which will enhance the carrots’ natural sweetness and add depth to the final dish.
Spread the seasoned carrots in a single layer on the prepared baking tray, ensuring they have adequate space around each piece for proper heat circulation. Overcrowding will cause the carrots to steam rather than roast, preventing the development of the caramelized edges that make this dish so delicious.
Roast the carrots in the preheated oven for 15-20 minutes, checking after 12 minutes to gauge their progress. They’re perfectly done when they’re tender throughout and have developed beautiful golden-brown edges with some caramelization. The exact timing will depend on the thickness of your carrot pieces, so adjust accordingly.
While the carrots are roasting, prepare the honey-cumin dressing that will tie all the flavors together. In a small bowl, whisk together the Coonowrin honey, fresh lemon juice, ground cumin, and a pinch of salt and pepper. The dressing should be well balanced, with the honey’s sweetness complemented by the lemon’s acidity and the cumin’s warm, earthy notes.
Drain and rinse the chickpeas thoroughly under cold running water, removing any loose skins that float to the surface. Pat them dry with paper towels to remove excess moisture, which will help them absorb the dressing more effectively and prevent the salad from becoming watery.
Wash the fresh parsley thoroughly and pat it completely dry before chopping. The herbs should be completely dry to prevent them from wilting when added to the warm roasted vegetables. Chop the parsley relatively coarsely to maintain its texture and visual appeal in the finished dish.
Once the carrots are perfectly roasted and still warm, transfer them to a large mixing bowl along with the drained chickpeas. The residual heat from the carrots will slightly warm the chickpeas, helping them absorb the flavors more effectively.
Pour the prepared honey-cumin dressing over the warm carrot and chickpea mixture, tossing gently but thoroughly to ensure everything is well coated. The warmth of the vegetables will help the honey dissolve and distribute evenly throughout the salad.
Add the chopped fresh parsley and give the salad one final gentle toss to distribute the herbs evenly. The bright green parsley provides color contrast and fresh flavor that balances the rich, sweet notes from the honey and roasted carrots.
This salad can be served immediately while still warm, or allowed to cool to room temperature or even chilled for later serving. The flavors actually improve with time as the chickpeas continue to absorb the dressing. It keeps beautifully in the refrigerator for 3-4 days, making it perfect for meal prep or packed lunches.
