  • Pinch of fine sea salt
  • 1 tbsp amaretto or brandy (optional, for adult version)
  • Optional: 1 tsp fresh thyme leaves or finely grated lemon zest
For the vanilla mascarpone:
  • 250g mascarpone cheese, chilled
  • 2 tbsp icing sugar, sifted
  • 1 tsp pure vanilla extract or seeds from ½ vanilla bean
  • 2-3 tbsp heavy cream or milk (for desired consistency)
  • Pinch of salt

Method
