Method
Begin by preheating your oven to 200°C (fan 180°C) and lining a large baking tray with baking paper. The size of your tray is important – it should be large enough to accommodate all the ingredients in a single layer without overcrowding, which ensures proper browning and even cooking throughout.
Prepare the honey-mustard glaze that will transform these simple ingredients into something special. In a medium bowl, whisk together the Coonowrin honey, Dijon mustard, minced garlic, olive oil, lemon juice, and a generous seasoning of salt and pepper. The mixture should be smooth and well combined, with the honey’s sweetness balanced by the mustard’s tanginess and the garlic’s aromatic depth.
Pat the chicken thighs completely dry with paper towels, as any surface moisture will prevent proper browning and caramelization. Season both sides of the thighs generously with salt and pepper, ensuring the seasoning adheres well to the skin. Turn the chicken pieces skin-side up for the final arrangement.
The initial arrangement is crucial for achieving the best results. The chicken should be skin-side up to allow for maximum crisping, while the vegetables should be cut-side down where possible to encourage caramelization. Everything should fit in a single layer with some space around each piece for proper air circulation.
Place the tray in the preheated oven and roast for 30 minutes without disturbing. After this initial cooking period, carefully remove the tray and turn the potatoes and onions to ensure even browning on all sides. The chicken should remain skin-side up throughout the cooking process to maintain its crispy texture.
Return the tray to the oven for an additional 5-10 minutes, or until the chicken is completely cooked through with juices running clear when pierced at the thickest part. The skin should be golden brown and crispy, while the vegetables should be tender and beautifully caramelized from the honey glaze.
Check that the internal temperature of the chicken reaches 75°C if you have a meat thermometer. The potatoes should be easily pierced with a fork, and the onions should be soft and slightly charred at the edges. The honey glaze should have caramelized into a beautiful golden coating on all the ingredients.
Remove from the oven and let rest for 5 minutes before serving. This resting period allows the juices to redistribute throughout the chicken, ensuring moist, flavorful meat.
