Honey-Lime Yogurt Parfait Recipe:
  • 250g Greek-style yogurt
  • 2 tbsp Coonowrin Honey
  • Zest and juice of ½ lime
  • 1 tsp vanilla extract
  • 1 cup granola (your favourite)
  • 1 cup fresh berries (e.g., strawberries or blueberries)

Method

Begin by preparing the honey-lime yogurt mixture that forms the creamy base of these parfaits. In a medium bowl, combine the Greek-style yogurt with the Coonowrin honey, ensuring you measure the honey accurately as it provides the primary sweetness for the entire dish. The thick, creamy texture of Greek yogurt is essential for creating parfaits that hold their shape and provide satisfying richness.

Add the fresh lime zest and juice to the yogurt and honey mixture. Use a microplane or fine grater to zest the lime, being careful to avoid the bitter white pith underneath the bright green skin. The zest contains essential oils that provide intense lime flavor, while the juice adds brightness and acidity that balances the honey’s sweetness perfectly.

Stir in the vanilla extract, which adds depth and warmth to the flavor profile without overwhelming the citrus notes. Whisk all ingredients together thoroughly until the mixture is completely smooth and well combined. The honey should be fully incorporated without any streaks, and the lime juice should be evenly distributed throughout.

Add a pinch of salt to the yogurt mixture if desired – this might seem unusual, but a tiny amount of salt enhances all the other flavors and makes the honey taste even sweeter. Whisk once more to ensure everything is perfectly combined, then taste and adjust if needed. The mixture should be creamy, tangy, and naturally sweet with bright lime notes.

Prepare your berries by washing them gently and patting them completely dry. If using strawberries, remove the green tops and slice them into bite-sized pieces. Blueberries can be left whole. The berries should be perfectly ripe for the best flavor and texture in the finished parfaits.

Choose attractive glasses, jars, or bowls for assembling your parfaits. Clear containers work best as they showcase the beautiful layers of different colors and textures. Wide glasses or small bowls are easier to eat from than tall, narrow containers.

Begin layering the parfaits by dividing half of the honey-lime yogurt mixture between the two serving containers. Use a spoon to spread it evenly and create a smooth base layer. The yogurt should come about one-third of the way up the sides of your containers.

Add half of the granola on top of the yogurt layer, distributing it evenly between both containers. Choose a granola that has good texture contrast with nuts, seeds, or dried fruit pieces. The granola provides essential crunch that contrasts beautifully with the smooth yogurt and soft berries.

Add half of the prepared berries over the granola layer, arranging them attractively if using clear containers where the layers will be visible. The berries provide natural sweetness, vibrant color, and juicy texture that complements the other components perfectly.

Repeat the layering process with the remaining ingredients: add the rest of the honey-lime yogurt, followed by the remaining granola, and finish with the final portion of berries. Each layer should be distinct and visually appealing, creating an attractive presentation that’s as pleasing to look at as it is to eat.

For the best texture contrast, serve the parfaits immediately after assembly while the granola maintains its maximum crunchiness. However, they can be prepared up to 4 hours in advance and stored in the refrigerator, though the granola will soften slightly as it absorbs moisture from the yogurt and berries.

For make-ahead convenience, you can prepare the honey-lime yogurt mixture up to 3 days in advance and store it separately in the refrigerator. Assemble the parfaits just before serving, adding the granola and berries at the last moment to maintain optimal textures.

These parfaits are highly customizable – swap the berries for other seasonal fruits like sliced peaches, diced mango, or fresh banana. Different granolas can completely change the character of the dish, so experiment with varieties that include coconut, nuts, or different grains to find your favorite combination.
