- 1 tsp fine sea salt (plus extra for draining silverbeet)
- 1/4 tsp freshly ground black pepper
- Neutral vegetable oil for frying (sunflower or canola)

- Thick Greek yogurt or tzatziki
- Optional: fresh dill sprigs for garnish
Method
Prepare silverbeet for optimal texture: Wash silverbeet thoroughly and pat completely dry. Finely chop both stems and leaves, keeping them together. Place chopped silverbeet in a large bowl and sprinkle generously with salt, tossing to distribute evenly. Let sit for 10 minutes to draw out excess moisture that could make fritters soggy.
Remove moisture completely: After 10 minutes, squeeze silverbeet firmly with clean hands or wrap in a clean kitchen towel and twist tightly to remove as much liquid as possible. This crucial step ensures crispy fritters rather than soggy, heavy ones. The silverbeet should feel significantly drier and more concentrated.
Create batter foundation: In a large mixing bowl, whisk together sifted flour, baking powder, salt, and pepper until well-combined and free of lumps. Sifting the flour helps create lighter, more tender fritters with better texture.
Combine wet ingredients: In a separate bowl, whisk together beaten eggs and milk until completely smooth and well-integrated. The mixture should be homogeneous with no streaks of egg visible.

Fry to golden perfection: Working in batches to avoid overcrowding, drop generous spoonfuls of batter (about 2 tablespoons each) into the hot oil. Use the back of the spoon to flatten slightly into neat rounds. Fry for 2-3 minutes per side until deep golden brown and crispy.
Drain and maintain crispness: Transfer cooked fritters immediately to paper towels to drain excess oil, then keep warm on a wire rack set over a baking sheet in a low oven if serving all at once. Proper draining ensures the fritters remain crispy rather than greasy.
Serve at optimal temperature: Arrange warm fritters on a serving platter and provide fresh lemon wedges for squeezing over each portion. A dollop of thick Greek yogurt or tzatziki alongside provides cooling contrast to the warm, crispy fritters.
