  • 1 tbsp caster sugar (optional, for extra sweetness)
For the passion fruit topping:
  • 1 can (395g) sweetened condensed milk, chilled
  • Juice of 2 large lemons (about ¼ cup), freshly squeezed
  • Pulp of 3 ripe passion fruit (about 5-6 tablespoons)
  • Optional: extra passion fruit pulp for garnish

Method

  1. Prepare your workspace: Line a 20x20cm square baking tin with parchment paper, leaving some overhang for easy removal. Choose a tin with straight sides for the cleanest cuts. Chill the tin in the refrigerator while you prepare the base – this helps the mixture set more quickly.
  2. Create perfect crumbs: Break biscuits into rough pieces and pulse in a food processor until you have fine, even crumbs with no large pieces remaining. Alternatively, place biscuits in a sealed plastic bag and crush with a rolling pin, working systematically to ensure even texture. The crumbs should hold together when pressed but not be powdery.
  3. Build the foundation: In a large bowl, combine biscuit crumbs, desiccated coconut, and melted butter. Mix thoroughly using a wooden spoon or your hands until every crumb is coated and the mixture holds together when pressed. The mixture should feel like wet sand and clump when squeezed.
  4. Press the base: Transfer the mixture to your prepared tin and press firmly and evenly using the back of a spoon or the base of a measuring cup. Pay special attention to the corners and edges, ensuring the base is level and well-compacted. A firm base is crucial for clean slicing later.
  5. Chill the foundation: Refrigerate the base for 15-20 minutes until firm. This prevents the base from mixing with the topping when you add it, ensuring distinct layers.
