Creamy Pea & Ham Pasta Recipe:
  • 2 cups cooked pasta (penne, shells, or your favourite)
  • 1 cup green peas
  • ½ cup diced ham or bacon
  • ½ cup thickened cream
  • ¼ cup grated Parmesan
  • 1 tbsp butter
  • Salt and pepper

Method

Begin by having your pasta cooked and ready, as this sauce comes together very quickly once you start. If you’re cooking fresh pasta, time it so the pasta finishes just as you’re ready to combine everything together. The key to this dish is maintaining the perfect creamy consistency, which means working efficiently once you begin the sauce.

Melt the butter in a large frying pan over medium heat, allowing it to foam gently without browning. Add the diced ham or bacon to the melted butter and cook for 3-4 minutes, stirring occasionally, until the meat becomes lightly browned and releases its savory flavors into the butter. The gentle browning creates deeper, more complex flavors that will enhance the entire dish.

Add the fresh or frozen peas to the pan with the ham and cook for another 2 minutes, just until the peas are heated through and bright green. If using frozen peas, they’ll need just enough time to thaw and warm, while fresh peas may need a minute longer to become tender. The peas should retain their vibrant color and slight firmness for the best texture in the finished dish.

Pour the thickened cream into the pan and bring it to a very gentle simmer, stirring constantly to prevent the cream from breaking or curdling. Let the cream bubble very gently for 1-2 minutes to allow it to thicken slightly and meld with the other flavors. The sauce should coat the back of a spoon lightly when it’s ready.

Remove the pan from heat and immediately stir in the grated Parmesan cheese, which will melt into the warm cream and create a silky, rich sauce. The residual heat is perfect for melting the cheese without making it stringy or grainy. Season the sauce with salt and pepper, tasting as you go since the ham and Parmesan both contribute saltiness to the dish.

Add the cooked pasta to the pan and toss everything together thoroughly, ensuring every piece of pasta is coated with the creamy sauce. If the sauce seems too thick, add a splash of the pasta cooking water to loosen it to the perfect consistency. The pasta should be well coated but not swimming in sauce.

Serve immediately in warmed bowls, topped with extra grated Parmesan if desired. For a quick shortcut when you’re pressed for time, you can substitute pre-cooked gnocchi or even leftover cooked rice for the pasta, creating an entirely different but equally delicious dish. The key is maintaining the creamy, comforting character that makes this recipe so appealing.
