FOR THE KIMCHI MAYONNAISE:
- 4 Red Delicious apples, spray-free (select firm, unblemished fruit)
- 60g light brown sugar (muscovado preferred for deeper flavour)
- 30g unsalted butter, diced into small cubes
- 1 tsp ground cinnamon (freshly ground if possible)
- 60g chopped walnuts or pecans (toasted for enhanced flavour)
- 2 tbsp sultanas or raisins (optional, for traditional sweetness)
- 60ml water
- Optional: 1 tsp vanilla extract for enhanced aroma
- Optional: pinch of nutmeg for additional warmth
Method
Prepare the perfect apple vessels: Preheat your oven to 190°C (170°C fan) and position the rack in the centre for even heat distribution. Using a sharp apple corer or small paring knife, carefully remove the cores from each apple, ensuring you leave the bottom 1cm intact to create a natural well for the filling. If using a knife, work from the top down, creating a cavity approximately 2.5cm wide. Remove any remaining seeds or tough core material, then trim away any excess flesh to create neat, even wells that will hold the filling securely.
Create the aromatic filling: In a medium mixing bowl, combine the light brown sugar, ground cinnamon, chopped nuts, and sultanas if using. Mix thoroughly with a fork until the ingredients are evenly distributed and the mixture holds together slightly from the natural moisture in the brown sugar. For enhanced flavour, toast the nuts in a dry pan for 2-3 minutes until fragrant before adding to the mixture.
Assemble with care: Place the cored apples upright in a 23cm square or 20x25cm rectangular baking dish, ensuring they fit snugly without touching the sides. This prevents them from toppling during baking whilst allowing adequate air circulation. Divide the sugar-nut mixture evenly amongst the four apple cavities, using a teaspoon to pack the filling gently but firmly. Top each filled apple with equal portions of diced butter, distributing the pieces evenly over the surface of the filling.
Create the perfect baking environment: Pour the water around the base of the apples in the baking dish – never into the apple cavities themselves, as this would dilute the concentrated flavours. The water creates steam that prevents the apples from drying out whilst contributing to the caramelisation process. Cover the entire dish tightly with aluminium foil, creating a sealed environment that ensures even, gentle cooking.
Bake to perfection: Place in the preheated oven for 30-45 minutes, checking progress after 30 minutes by gently inserting a fork into the side of one apple. The apples are perfectly done when they yield easily to pressure but still maintain their shape – they should feel tender throughout but not collapse. If additional cooking time is needed, continue baking in 5-minute intervals, checking regularly to prevent overcooking.
Rest and serve with elegance: Remove from the oven and allow to rest for 5 minutes, which helps the filling to set slightly and makes serving easier. Carefully transfer each apple to warmed serving bowls using a large spoon, ensuring you capture any precious caramelised juices from the bottom of the dish. Drizzle these golden pan juices over each apple for maximum flavour impact.
Perfect accompaniments: Serve warm with a generous dollop of proper vanilla ice cream, thick double cream, or freshly whipped cream. For a more indulgent presentation, try serving with warm custard or a drizzle of golden syrup.
Storage and reheating: Leftover baked apples keep covered in the refrigerator for up to 3 days and can be gently reheated in a low oven until warmed through. The flavours often develop further overnight, making day-old baked apples particularly delicious.
