Cheesy Broccoli Pasta Bake Recipe:
  • 250g pasta (penne or fusilli)
  • 1 head of broccoli, cut into small florets
  • 2 tbsp butter
  • 2 tbsp plain flour
  • 1½ cups milk
  • 1 cup grated cheddar cheese
  • ¼ cup grated Parmesan
  • ½ tsp mustard (optional)
  • Salt and pepper
  • Breadcrumbs (optional topping)

Method

Begin by preheating your oven to 190°C (fan 170°C) and lightly greasing a large baking dish that will accommodate all the pasta and broccoli comfortably. The size of your dish is important – too small and the mixture will be too deep and won’t brown properly; too large and it may dry out during baking.

Bring a large pot of generously salted water to a vigorous boil. The water should taste distinctly salty, as this is your only opportunity to season the pasta from within. Add the pasta to the boiling water and cook for 6 minutes only – it should be quite firm and definitely undercooked at this stage, as it will continue cooking in the oven and absorb the cheese sauce.

Add the broccoli florets to the same pot with the pasta and continue cooking both together for another 3-4 minutes. This timing ensures the pasta reaches the perfect al dente texture while the broccoli becomes just tender and bright green. The vegetables should still have some bite to them as they’ll soften further during baking.

Drain the pasta and broccoli together, reserving about half a cup of the starchy cooking water before draining. This pasta water will be invaluable for adjusting the consistency of your cheese sauce if needed. Set the drained pasta and broccoli aside while you prepare the sauce.

In a medium saucepan, melt the butter over medium heat, allowing it to foam gently without browning. Add the plain flour to the melted butter and whisk constantly for about 1 minute to cook out the raw flour taste and create a smooth paste called a roux. This forms the thickening base for your cheese sauce.

Gradually add the milk to the roux, whisking constantly to prevent lumps from forming. Start with just a splash of milk, whisking vigorously until smooth, then gradually add the remaining milk in a steady stream while continuing to whisk. Bring the mixture to a gentle simmer, stirring constantly, until it thickens enough to coat the back of a spoon.

Remove the sauce from heat and immediately stir in the grated cheddar cheese, Parmesan, and mustard if using. The residual heat will melt the cheese perfectly without making it stringy or grainy. Season the sauce generously with salt and pepper, tasting as you go. The sauce should be creamy, smooth, and well-seasoned.

Combine the cooked pasta and broccoli with the cheese sauce in the prepared baking dish, mixing gently but thoroughly to ensure everything is well coated. If the mixture seems too thick, add a splash of the reserved pasta water to achieve the perfect consistency. The mixture should be saucy enough to remain creamy after baking.

If you’re using breadcrumbs for topping, sprinkle them evenly over the surface of the pasta bake. The breadcrumbs will create a delightfully crunchy contrast to the creamy interior. You can use fresh breadcrumbs made from day-old bread, or store-bought breadcrumbs work well too.

Bake in the preheated oven for 20-25 minutes, until the top is golden brown and the sauce is bubbling around the edges. The surface should be attractively browned while the interior remains creamy and hot throughout. Let the bake rest for 5 minutes before serving to allow the sauce to set slightly.
