Method
- Master the cabbage shredding technique: Remove outer leaves and cut cabbage into quarters, removing the core completely. Using a sharp knife, slice each quarter into very fine ribbons, about 2-3mm thick. Consistent, thin shredding ensures optimal texture and dressing absorption.
- Prepare supporting vegetables: Cut carrots into matchstick julienne using a sharp knife or mandoline for uniformity. If using red onion, slice as thinly as possible to minimize harsh bite while maintaining crunch and color contrast.
- Create the perfect dressing base: In a large mixing bowl, whisk together fresh lime juice, finely grated lime zest, honey, and chili flakes until the honey dissolves completely. The mixture should be aromatic and well-balanced between tart, sweet, and spicy elements.
- Build the emulsion: Slowly drizzle in olive oil while whisking continuously to create a light emulsion. The dressing should be glossy and slightly thickened, not separated. Season with salt and pepper, tasting and adjusting the balance of flavors.
