  • 400g French beans
  • 1 large onion, thinly sliced
  • 2 ripe tomatoes, chopped
  • 1 tbsp tomato purée
  • 3 tbsp olive oil
  • 120ml water
  • Salt and black pepper

Method

Start by preparing all your vegetables carefully, as proper preparation is key to achieving the best results with this braising technique. Trim the French beans and cut them into manageable lengths if they’re particularly long. Slice the onion thinly and uniformly so it cooks evenly, and chop the ripe tomatoes into rustic pieces, reserving any juices that escape during chopping as these will add to the sauce’s richness.

Heat the olive oil in a wide, heavy-bottomed saucepan over medium heat, choosing a pan that’s large enough to accommodate all the beans in roughly two layers. The wide surface area is important for proper evaporation and concentration of flavors during the braising process. Add the thinly sliced onion to the heated oil and cook slowly for 5-6 minutes, stirring occasionally, until the onion becomes soft, translucent, and sweetly aromatic.

Add the chopped tomatoes along with any accumulated juices and the tomato purée to the softened onions. Cook this mixture for 4-5 minutes, stirring occasionally, until the tomatoes begin to break down and release their juices, creating the base for your braising liquid. The tomato purée will deepen in color and contribute concentrated tomato flavor to the sauce.

Add the prepared French beans to the pan along with the water, ensuring the liquid comes about halfway up the beans. Season generously with salt and black pepper, keeping in mind that the flavors will concentrate as the liquid reduces during the braising process. Stir everything together gently to distribute the seasonings and coat the beans with the tomato mixture.

Bring the mixture to a gentle simmer, then reduce the heat to low and cover the pan with a tight-fitting lid. This creates a steamy environment that will cook the beans gently and evenly while allowing the flavors to meld together beautifully. Allow the beans to simmer very gently for 20-25 minutes, stirring once or twice during cooking to ensure even heat distribution and prevent sticking.

The dish is ready when the beans are very tender and can be easily cut with a fork, and the liquid has reduced to a rich, light tomato sauce that coats the beans beautifully. The beans should have absorbed much of the tomato flavor while maintaining their structure.
