Balsamic Roasted Red Onion & Spinach Flatbreads

  • 1 large red onion (about 250g), peeled and cut into wedges
  • 1 tbsp extra virgin olive oil
  • 1 tsp good-quality balsamic vinegar
  • 2 flatbreads, naan, or pita breads
  • 2 large handfuls fresh baby spinach (about 60g)
  • 50g soft cheese (ricotta, goat cheese, or feta), crumbled
  • Sea salt and freshly ground black pepper
  • Optional: 1 tsp honey for extra sweetness, fresh thyme leaves

Method

  1. Prepare for roasting: Preheat oven to 200°C (fan 180°C/gas mark 6). Line a baking tray with baking paper. Position the rack in the upper third of the oven for better caramelization.
  2. Prepare the onions: Cut the red onion into wedges, keeping the root end intact so the wedges hold together during roasting. Each wedge should be about 2cm thick at the widest part.
  3. Season the onions: In a bowl, toss the onion wedges with olive oil, balsamic vinegar, salt, and pepper. Ensure each wedge is well-coated. The balsamic will help with caramelization and add deep, complex flavors.
  4. Roast slowly: Arrange onion wedges on the prepared tray, cut-side down. Roast for 20-25 minutes until the onions are soft throughout and the edges are golden brown and slightly charred. The natural sugars should caramelize, creating sticky, jammy edges.
  5. Check for doneness: The onions are ready when they’re tender when pierced with a fork and have developed deep caramelized edges. If they need more time, continue roasting in 5-minute increments.
  6. Prepare the base: While onions roast, warm the flatbreads. You can do this in the oven for the last 2-3 minutes of the onion cooking time, or heat them in a dry frying pan until just warmed through.
  7. Wilt the spinach: If using raw spinach, you can wilt it slightly by placing it in a colander and pouring boiling water over it, then squeezing out excess moisture. Alternatively, leave it fresh for more texture and peppery bite.
  8. Assemble the flatbreads: Spread the warmed flatbreads on serving plates. Distribute the spinach evenly over each flatbread, then top with the roasted onion wedges and crumbled cheese.
  9. Final touches: Drizzle with any caramelized juices from the roasting tray. Add a squeeze of fresh lemon juice or a drizzle of honey if desired. Garnish with fresh thyme leaves for an aromatic finish.

Serving suggestions: Cut into wedges and serve immediately while the flatbreads are still warm. Pair with a simple green salad dressed with lemon vinaigrette for a complete meal.

Storage: Best served immediately, but leftover roasted onions can be stored in the refrigerator for up to 3 days and used in sandwiches, salads, or pasta dishes.
