  • 250g mushrooms, chopped
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 tsp olive oil
  • ½ tsp smoked paprika
  • 1 cup grated cheddar or mozzarella
  • 4 small flour tortillas
  • Salt and pepper
  • Sour cream or salsa, to serve

Method

Preheat your oven to 200°C (fan 180°C) and have a large baking tray ready. The high temperature is essential for achieving crispy, golden tortillas while ensuring the cheese melts completely and the filling heats through evenly. Line the tray with baking paper if you prefer, though it’s not strictly necessary if your tray is well-seasoned.

Prepare the mushroom filling that will be the heart of these quesadillas. Clean the mushrooms gently and chop them into small, uniform pieces – they should be small enough to distribute evenly within the tortillas but large enough to maintain some texture and provide satisfying bites. Avoid making them too fine, as this can result in a mushy filling.

Finely chop the onion and mince the garlic, ensuring both are cut small enough to cook quickly and integrate smoothly with the mushrooms. The onion will provide sweetness and depth, while the garlic adds aromatic complexity that complements the earthy mushroom flavors perfectly.

Heat the olive oil in a large frying pan over medium heat. Add the chopped onion and cook for about 3 minutes, stirring occasionally, until it begins to soften and become translucent. The slow cooking of the onion is important for developing sweet, mellow flavors that will enhance rather than compete with the mushrooms.

Add the chopped mushrooms to the pan along with the minced garlic and smoked paprika. The smoked paprika adds a subtle smoky depth that enhances the earthy mushroom flavors while providing a beautiful warm color to the filling. Stir everything together to combine evenly.

Cook the mushroom mixture for 6-8 minutes, stirring occasionally, until the mushrooms have released their moisture and become golden brown around the edges. Season the cooked mushroom mixture generously with salt and pepper, tasting as you go to ensure proper seasoning. Remove from heat and let cool slightly while you prepare the tortillas.

Lay two tortillas on the prepared baking tray, spacing them so they don’t touch. These will be the bottom layers of your quesadillas. Divide the mushroom filling evenly between the two tortillas, spreading it out to within about 1cm of the edges to prevent spillage during baking.

Sprinkle the grated cheese evenly over the mushroom filling on each tortilla. Use enough cheese to hold the filling together and create satisfying stretchy melted cheese, but not so much that it overwhelms the mushroom flavors. The cheese acts as both a binding agent and a delicious component in its own right.

Top each filled tortilla with the remaining tortillas, pressing down gently around the edges to seal them slightly. The pressure helps prevent the filling from escaping during baking while ensuring the tortillas stay together as they crisp up in the oven.

Place the assembled quesadillas in the preheated oven and bake for 8-10 minutes, then carefully flip each one using a large spatula and bake for another 8-10 minutes until both sides are golden brown and crispy. The cheese should be completely melted and the tortillas should feel firm and crispy to the touch.

Remove from the oven and let the quesadillas cool for 2-3 minutes before cutting – this brief resting period allows the cheese to set slightly, making them easier to cut cleanly and preventing all the filling from spilling out when sliced.

Using a sharp knife or pizza cutter, cut each quesadilla into 4-6 wedges, depending on your preference and intended serving style. Arrange the wedges on serving plates and provide small bowls of sour cream and salsa on the side for dipping.

The contrast between the crispy, golden tortillas and the creamy, savory filling creates a satisfying textural experience, while the mushrooms provide rich, earthy flavors that make these quesadillas much more substantial and interesting than simple cheese versions. For variation, you could add other ingredients like diced bell peppers, jalapeños for heat, or fresh herbs like cilantro, but the mushroom and cheese combination is delicious and satisfying on its own.
